THE HERITAGE WINE BAR

WITH THE CLIENT HAVING IDENTIFIED THE NEED FOR AN ADDITIONAL PRIVATE DINING ROOM WITH A CAPACITY UP TO 40 PEOPLE, WE WERE REFERRED BY OUR CLIENTS AT BROOKFIELD PROPERTIES TO ED AT THE HERITAGE TO UNDERGO THE RECONFIGURATION OF THE BAR AND DINING SPACES WITHIN THE HERITAGE LISTED BUILDING.

A design and construct contract, we engaged the hospitality specialist, with whom we had worked with previously, Design Theory to partner with us. Providing the client with the best use of space while incorporating our client’s requests, we then engaged specialist Heritage Consultants, Palassis Architects, to provide peer review and a Heritage Report to the City of Perth. After reassuring the Council that the works would not alter the fabric of the building by working closely with our trusted subcontractors to provide workarounds such as walls to the new private dinning room that could easily be removed, works commenced on site.

Over two days we removed exiting banquet seating and created a new private dining room shell, flushed the exterior and painted. Reusing the seating, temporary solutions were installed and the venue reopened after only one day of down time. Daily, we completed all works between 5am and 11am, when the venue opened so not to disrupt normal operations.

Along with the creation of the private dining room, we reconfigured the existing dining space to provide an area that could also be separated for group bookings. The POS system within the space was relocated into a recess in the wall of the new room, with custom joinery to accommodate.

Reuse of the existing banquet seating gave the best value to the client. We reused some of the remaining pieces to create a new seating arrangement within the bar area where the wine store was. The wine store was relocated to fit within the custom joinery pieces next to the POS system and private dining room. Working closely with the joinery contractor whom originally built and upholstered the seating, new pieces were created where required to meet the new layout, forming a seamless finish that tied in perfectly with the existing. They also reused the custom built wine racks to fit within the joinery but were sprayed black to integrate.

Within the private dining room, lighting was relocated to meet the new layout and services were altered to allow for them to be independent of the main circuit. The A/C system was modified to its own thermostat and controls.
